Carrots are a valuable source of cancer –fighting
betacarrotenes, and this light and refreshing salad will prepare your
palette for what is to come.
Peel and coarsely grate three medium sized carrots. Dress with freshly
squeezed lemon juice, a teaspoon of ground cumin and two tablespoons of
fresh, chopped mint. Add sesame seeds or shredded cabbage (marinade
cabbage over night in a vinaigrette). |
