For two (multiply the portions to suit
numbers)
Ingredients
225g (8oz) lean minced beef, pork or lamb
- 2 bread buns
- 50g (2oz) cheddar cheese
- 30ml (2 tbsp) tomato relish
- Tomato or mushroom
- 30ml (2 tbsp) mayonnaise
- 5ml (1 tbsp) pesto, wholegrain mustard or curry paste
Method
- Place the mince in a large bowl.
- Season and mix thoroughly. Divide the mixture into two and shape
into burgers.
- Place under a pre-heated grill for four to six minutes each side
until thoroughly cooked, turning once.
- During the last three minutes of cooking time add two lean back
bacon rashers to the grill pan and continue cooking.
- During the last minute of cooking time halve two burger buns. Place
half of the cheese on one half of the buns.
- On the remaining half, spread half of tomato relish. Top the sauce
with four slices of tomato or mushroom.
- Repeat and grill for the remaining minute.
- Place the burgers in the buns, top with the bacon and make a tasty
mayonnaise. Mix mayonnaise with wholegrain mustard, pesto or curry
paste.

Serve the burgers with the mayonnaise and a large mixed salad,
