Gnocchi in Tomato Dressing

  • Gnocch in Tomato Dressing500g Gnocchi
  • melted butter
  • 8 medium sized tomatoes, peeled and sliced
  • 4 finely chopped garlic cloves
  • 20g fresh basil leaves
  • 125ml olive oil
  • salt and pepper
  1. Bring a large pan of water to the boil, with a pinch of salt.
  2. Drop in the gnocchi one by one and simmer for two to three minutes until all the gnocchi have risen to the surface.
  3. Drain and add to a dish containing warmed melted butter.
  4. Toss the chopped tomatoes, basil leaves, garlic and olive oil together and combine with gnocchi.
  5. Season to taste and serve.
