Ingredients
1 baguette
1 chopped onion
1 crushed garlic clove
50g of butter
1 tablespoon of olive oil
100g of sliced mushrooms
425g of tinned chopped tomatoes
100g of diced cheddar cheese
100g of diced mozzarella
1/2 a tablespoon of dried oregano
To Make
Pre-heat the oven grill
Cut the baguette in half horizontally and butter both
halves. Then cut each half across the middle to make four pieces.
Fry the onion and garlic in oil until softened. Add
the mushrooms and cook for a few minutes then add the tomatoes.
Simmer for 10 minutes until the tomatoes have reduced
and thickened.
Spread the tomato mixture onto the bread, sprinkle
with salt, pepper and oregano.
Dot with cheese and place under a grill until the cheese has melted.
Thai Chicken Pizza
Ingredients Dough
230ml of hot water
2 tablespoons of dry yeast
285g of flour
1 tablespoon of honey
1 tablespoon of salt
Toppings
3 cubed boneless chicken breasts
290ml of peanut sauce
115g of grated edam cheese
180g of grated mozzarella
1 chopped carrot
4 chopped spring onions
50g of chopped peanuts
2 tablespoons of chopped fresh coriander
peanut oil for frying
To Make
Dissolve the honey in a small bowl of warm water.
Sprinkle in the yeast and stir until it dissolves. Let stand for 5 mins.
Add the flour and salt to a large bowl and make a
well in the middle.
Add the yeast mixture and olive oil to the well and
mix.
Turn out onto a lightly floured surface and knead for
15 minutes. Place the dough in an oiled bowl, cover and leave for one and a
half hours.
Sauté the chicken in the peanut oil so it turns
brown, add the peanut sauce until boiling then remove from heat.
Punch the dough and roll out into 2 equal portions.
Turn the oven on to 190°C / gas mark 5. Sprinkle the
cheeses over the pizza base.
Spoon the chicken mixture onto the pizza and then
sprinkle the vegetables and peanuts on top.
Bake in the oven for about 10 minutes and then serve.
Garden Fresh Veggie Pizza
Ingredients
2 teaspoons of oil
1/2 a cup of sliced red peppers
1/4 of a cup of sliced mushrooms
1 sliced onion
1/2 a cup of fresh spinach
1 pound of French bread
1 sliced tomato
1/2 a cup of grated mozzarella cheese
1/3 of a cup of grated Romano cheese
2 tablespoons of oil
2 tablespoons of malt vinegar
1 tablespoon of basil
1 tablespoon of oregano
To Make
Use the oil to fry the peppers, mushrooms and onion
until tender.
Slice the French bread horizontally and arrange the
spinach on it followed by the cooked vegetables, tomato and the two cheeses.
Place on a baking tray and cook at 375 degrees for
ten minutes or until the cheeses have melted.
In a small bowl combine 2 tablespoons oil, malt vinegar, basil, and oregano. Drizzle over the pizzas.
