Serves 2
20cm-round thin and crispy ready-made pizza base;
- 3tbsp sun-dried tomato paste;
- 100g goats' cheese, cut into chunks;
- 2 plum tomatoes, sliced;
- 1 spring onion, sliced;
- 30g prosciutto, torn into strips;
- handful of fresh rocket;
- extra virgin olive oil for drizzling;
- freshly ground black pepper
- Preheat the oven to 220C/425F/Gas 7.
- Put the pizza base on a baking sheet and spread with the sun-dried
tomato paste, leaving 1.5cm clear around the edge.
- Scatter the goats' cheese on top, followed by the sliced tomatoes,
spring onion, and prosciutto.
- Bake for 10-12 minutes, or until the cheese has melted and the
prosciutto is crisp.
- Remove from the oven, pile the rocket on top, drizzle with olive oil
and a grinding of pepper and serve.
