Prosciutto and rocket pizza

Serves 2

  • 20cm-round thin and crispy ready-made pizza base;
  • 3tbsp sun-dried tomato paste;
  • 100g goats' cheese, cut into chunks;
  • 2 plum tomatoes, sliced;
  • 1 spring onion, sliced;
  • 30g prosciutto, torn into strips;
  • handful of fresh rocket;
  • extra virgin olive oil for drizzling;
  • freshly ground black pepper

 

  1. Preheat the oven to 220C/425F/Gas 7.
  2. Put the pizza base on a baking sheet and spread with the sun-dried tomato paste, leaving 1.5cm clear around the edge.
  3. Scatter the goats' cheese on top, followed by the sliced tomatoes, spring onion, and prosciutto.
  4. Bake for 10-12 minutes, or until the cheese has melted and the prosciutto is crisp.
  5. Remove from the oven, pile the rocket on top, drizzle with olive oil and a grinding of pepper and serve.
