Chewy Oatmeal Cookies

Ingredients
1 1/4 cups of firmly packed brown sugar
1/2 cup of cooking margarine
1/4 cup butter, softened
1/3 cup of milk
1 egg
1 1/2 teaspoons of vanilla
3 cups of quick-cooking oats
1 cup of flour
1/2 teaspoon of baking soda
1/2 teaspoon of salt
1/4 teaspoon of ground cinnamon
1 cup of raisins
1 cup of chopped walnuts

To Make

  • Preheat oven to 350°F. Lightly grease cookie sheets.
  • In a medium sized bowl, mix together oats, flour, baking soda, salt and cinnamon.
  • In another bowl which is larger, beat brown sugar, margarine and butter until smooth. Add milk, egg and vanilla and stir until well combined.
  • Stir the dry ingredients into the large bowl and mix thoroughly. Blend in raisins and walnuts.
  • Drop by rounded teaspoon onto prepared cookie sheets and bake 10-12 minutes until lightly browned. Cool slightly before removing cookies from sheets to wire rack.
Makes roughly 36 cookies.
