Pork Crown Roast

Feeds seven

Cooking time: Medium: 30 minutes per 450g (1Ib) plus 30 minutes
Well done: 35 minutes per 450g plus 35 minutes
Oven temperature gas mark 4-5, 180C, 350F

Ingredients

  • 1.2 pork crown roast
  • 2 cloves garlic
  • 2.5cm (1 inch) fresh root ginger
  • 1/2 zest of one lemon
  • 30ml (2tbsp) fresh sage
  • Salt and black peppercorns
  • 15ml (1 tbsp) oil
  • 30ml (2 tbsp) lime marmalade

Method

  1. Pound and crush the garlic, lemon zest, sage leaves and salt and pepper together and mix into the oil.
  2. Make deep slits into the pork crown roast and push the mixture into the slits.
  3. Place on a rack in a roasting tray and open-roast in a preheated oven for calculated cooking time.
  4. Fifteen to 20 minutes before the end of cooking time glaze the crown roast with the marmalade.
  5. Serve hot with roasted potatoes, red onions and apples roasted alongside the crown roast, apple sauce and extra green vegetables.
