Crunchy Baked Chicken

  • 2 chicken quarters
  • 2 tbsps cornflour
  • 1 medium packet crisps
  • evaporated milk

Method:

  1. Pre-heat oven to 350F (Gas Mark 4/180C).
  2. Rub the chicken quarters all over with salt.
  3. Crush the potato crisps with a rolling pin on a sheet of greaseproof paper.
  4. Dip the chicken quarters in the evaporated milk then coat evenly with the potato crisp crumbs.
  5. Place skin side up on a baking sheet and cook in the pre-heated oven for 40-45 minutes.
  6. Leave on kitchen paper to cool.
