2 chicken quarters
- 2 tbsps cornflour
- 1 medium packet crisps
- evaporated milk
Method:
- Pre-heat oven to 350F (Gas Mark 4/180C).
- Rub the chicken quarters all over with salt.
- Crush the potato crisps with a rolling pin on a sheet of greaseproof
paper.
- Dip the chicken quarters in the evaporated milk then coat evenly
with the potato crisp crumbs.
- Place skin side up on a baking sheet and cook in the pre-heated oven
for 40-45 minutes.
- Leave on kitchen paper to cool.
