Ingredients: (serves 4)
1 x 1.6kg (3 1/2lb) Cooked Lobster
- 50g (2oz) Butter
- 1 tbsp Fresh Thyme, chopped
- 1/4 tsp Cayenne Pepper
- Fresh Parsley to garnish
Method:
- Preheat the grill to hot.
- Cut the lobster in half lengthways and remove stomach sac and
intestinal vein.
- Arrange lobster halves, flesh side up, on grill pan and grill for 2
minutes.
- Ease the flesh away from shell with a grapefruit knife and cut into
bite-size pieces.
- Dot with butter and sprinkle the thyme and cayenne over the top.
- Grill for a further 5-8 minutes, basting from time to time.
To serve
- Arrange on a serving platter, spoon the juices over and garnish with
parsley.
- Serve immediately with a sauce of your choice.
