Grilled Lobster

Ingredients: (serves 4)

  • 1 x 1.6kg (3 1/2lb) Cooked Lobster
  • 50g (2oz) Butter
  • 1 tbsp Fresh Thyme, chopped
  • 1/4 tsp Cayenne Pepper
  • Fresh Parsley to garnish

Method:

  1. Preheat the grill to hot.
  2. Cut the lobster in half lengthways and remove stomach sac and intestinal vein.
  3. Arrange lobster halves, flesh side up, on grill pan and grill for 2 minutes.
  4. Ease the flesh away from shell with a grapefruit knife and cut into bite-size pieces.
  5. Dot with butter and sprinkle the thyme and cayenne over the top.
  6. Grill for a further 5-8 minutes, basting from time to time.


To serve

  1. Arrange on a serving platter, spoon the juices over and garnish with parsley.
  2. Serve immediately with a sauce of your choice.
